EASY BOURBON CHICKEN

EASY BOURBON CHICKEN INGREDIENTS 2 lbs boneless skinless chicken thighs cut into 1 inch pieces 1 tablespoon olive oil salt and pepper to taste 1 teaspoon minced garlic 1/4 cup bourbon apple juice can be substituted 1/4 cup brown sugar 2 tablespoons ketchup 1 teaspoon apple cider vinegar 1/2 cup water 1/3 cup low sodium soy sauce 1 tablespoon cornstarch 2 tablespoons sliced green onions optional INSTRUCTIONS Heat the oil in a large pan over medium high heat. Season the chicken with salt and pepper to taste. Place the chicken in the pan and cook for 4-5 minutes on each side or until golden brown and cooked through. Add the garlic to the pan and cook for 30 seconds. While the chicken is cooking. In a medium bowl whisk together the bourbon, brown sugar, ketchup, apple cider vinegar, water, soy sauce and cornstarch. Pour the sauce mixture over the chicken and bring to a boil. No Peek Chicken INGREDIENTS: 1 box Uncle Ben’s Long Grain Wild Rice (original recipe) 1 can cream of mushroom soup 1 can cream of celery soup 1 can water (You can add another can of water for moister rice.) Chicken breasts or tenders DIRECTIONS: In a greased 9 x 13 pan, mix the box of rice, cans of celery and mushroom soup and one can of water. I always add the extra can of water because I like moist rice. Arrange the raw chicken on top of the rice mixture…. EASY BOURBON CHICKEN INGREDIENTS 1 1/2   lb (680g)   chicken breast   , cut into bite-size chunks 1/2   cup   low sodium soy sauce 1/3   cup   bourbon 1/4   cup   water 1/4   cup   apple cider vinegar 1/4   cup   brown sugar 1   teaspoon   fresh grated ginger 1/2   teaspoon   red pepper flakes 3   cloves   crushed garlic 1/4   cup   finely chopped onion 2   tablespoons   olive oil sesame seeds   , for garnishing (optional) chopped chives   , for garnishing (optional) INSTRUCTIONS For the marinade: combine soy sauce, bourbon, water, vinegar, sugar, ginger, red pepper flakes, garlic and chopped onion in a large zip-lock plastic bag and mix well. Add chicken breast chunks, seal bag and marinate in the fridge for as long as you can, at least 4 hours, turning the bag occasionally. In a large skillet heat the olive oil over medium-high heat. Add the chicken chunks and cook until the meat is no longer pink. Pour half the marinade over the chicken and and stir to coat. Reduce heat to simmer. C

LEMON GARLIC ROASTED CHICKEN INGREDIENTS 2 small or 1 large lemon 1/3 cup olive oil 6 cloves garlic 1/4 tsp salt Freshly cracked pepper 2 lbs split chicken breasts* INSTRUCTIONS Preheat the oven to 275ºF. Squeeze about 3 Tbsp lemon juice from the lemon(s) and slice the remainder. Mince two cloves of the garlic, and peel the remaining 4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper. Pat the chicken breasts dry with a paper towel. Place them in a glass or ceramic casserole dish. Pour the prepared lemon marinade over the chicken, using a spoon to redistribute the marinade and make sure the surface of the chicken is fully covered. Add the remaining cloves of peeled garlic and sliced lemon around the chicken. If you're sensitive to bitter flavors, add the additional lemon slices after baking. Cover the dish tightly with foil. Roast the chicken in the preheated oven for 90 minutes. After 90 minutes, turn the oven up to 425ºF, remove the foil

Crock Pot Garlic Brown Sugar Chicken! INGREDIENTS : 4-6 Chicken thighs or breasts 4 tablespoons fresh garlic, chopped small 1 cup brown sugar 1 teaspoon black pepper 1/4 cup water 1 teaspoon fresh parsley 1 tablespoon olive oil 2 Tablespoons soy sauce DIRECTIONS : In a large crock pot or slow cooker add all the ingredients (EXCEPT the chicken) and mix until fully incorporated. Then add in your chicken pieces, tossing them in the mixture so they are completely coated on both sides. Cook on LOW for 7 hours or HIGH for 4 hours. Once its ready, carefully remove the pieces one by one (careful they will start to fall apart) and place into a baking dish, broil for 10 minutes or until the tops are nicely browned. EASY BOURBON CHICKEN INGREDIENTS 5-6 skinless boneless chicken breasts - about 3 pounds 3 tablespoons cornstarch divided 1/2 teaspoon salt 1/4 teaspoon black pepper 4 tablespoons canola oil 2 cloves garlic minced 1 cup water 1/2 cup apple juice 1/4 cup bourbon 1/2 cup chicken broth 2/3 cup lite soy sauce lower sodium 1/3 cup ketchup 2 tablespoons apple cider vinegar 1 cup packed light brown sugar 1/2 teaspoon onion powder 1/2 teaspoon ground ginger 1/2 teaspoon crushed red pepper flakes INSTRUCTIONS Note: click on times in the instructions to start a kitchen timer while cooking. Cut the chicken into 1 inch pieces and in a large bowl toss it with 2 tablespoons of the cornstarch, salt, and pepper. Add 2 tablespoons of canola oil into your nonstick skillet on medium high heat and let it heat until adding the first piece of chicken sizzles. Add half the chicken pieces and cook for 3 minutes without stirring. Turn the chicken pieces and cook and additional three minutes. Remove the chicken
